EASIEST PASTA SAUCE

Ingredients


  1. 2 cups boiled pasta
  2. 3 tbsp extra virgin olive oil
  3. 1 large onion, chopped
  4. 2 garlic cloves, crushed
  5. 3 x 400g cans of chopped tomatoes
  6. ¼ - ½ tsp dried chille flakes
  7. 2 tsp balsamic vinegar
  8. 2 tsp sugar
  9. 1 large handful basil leaves, torn into small pieces
  10. Salt and freshly ground black pepper
  11. Grated parmeson cheese, to serve


Preparation


  1. Heat the oil in a saucepan and gently cook the onion and garlic until softened. Stir in the tomatoes, chilli flakes, balsamic vinegar and sugar. Bring to a simmer and cook slowly for 45 minutes-1 hour. Stir in the basil and season with salt and pepper. This can be left chunky or blended in a food processor for a smooth sauce.

  2. Serve spooned over cooked pasta with plenty of parmesan cheese.

LAZY BAKED DRUMSTICKS

I wanted a basic way to cook drumstick since they are cheaper and tastier than the breasts. So this is what i came up with guys, Hope you'll enjoy my 10th recipe "LAZY BAKED DRUMSTICKS"



Ingredients 


  • 5 -6 chicken drumsticks
  • Garlic powder
  • Pepper
  • Salt
  • Olive oil
  • Onion 1
  • Chili powder

Method

  • Put some olive oil in the bottom of a pan and saute the chopped onion .
  • Add drumsticks (space enough apart so they aren't touching each other).
  • Sprinkle generously with pepper, chilli and garlic powder. Sprinkle lightly with salt.
  • Bake at 375 for half an hour. Turn drumsticks over and add more chilli/garlic powder, pepper and salt (same as before).
  • Bake another half an hour (or until cooked til 160 degrees)

CHEESE KOTHTHU ROTI my style

Guys, so here's my 9th recipe ''CHEESE KOTHTHU ROTI''. Yayy.. Well, this koththu is super duper easy to make and it is super delicious too. I'm a koththu lover myself, so hope you guys would enjoy. Tee Heee 





INGREDIENTS 

  • Roti (chopped)                               3 cups
  • Onion (chopped)                            1 large
  • Garlic/ginger paste                         1tbsp each
  • Tomatoes (diced)                            1 large                        
  • Carrots (diced)                               1/2 cup                   
  • Eggs                                              3
  • Soy sauce                                      2 tbsp
  • Leeks (diced)                                 1/2 cup                                  
  • Salt (to taste)
  • Pepper (to taste)
  • Green chillies (diced)                      3
  • Paprika (to taste)
  • Oil                                                2 tbsp
  • Parmesan cheese                           1/3 cup
  • Heavy cream                                  1/3 cup



METHOD 

  1. Heat oil in a pan, add ginger & garlic paste & sauté it for 1min.
  2. Then add in your onions, carrots, salt, and pepper and mix them well (cook it for 3 to 4mins)
  3. Now put your eggs in, stir nicely and keep on cooking (medium heat), until the eggs are ready.
  4. Next throw in the roti, soy sauce, paprika, Green chillies & leeks & give it a good stir (cook this for 3 to 4mins).
  5. Then get your tomatoes, parmesan cheese & milk in & leave it for another 4 to 5mins, until everything is evenly cooked (make sure to stir).
  6. Finally remove from the heat & sprinkle some parmesan cheese on top.
  7. Serve with grilled chicken, meat curry or with anything you prefer…
