Guys, so here's my 9th recipe ''CHEESE KOTHTHU ROTI''. Yayy.. Well, this koththu is super duper easy to make and it is super delicious too. I'm a koththu lover myself, so hope you guys would enjoy. Tee Heee 





INGREDIENTS 

  • Roti (chopped)                               3 cups
  • Onion (chopped)                            1 large
  • Garlic/ginger paste                         1tbsp each
  • Tomatoes (diced)                            1 large                        
  • Carrots (diced)                               1/2 cup                   
  • Eggs                                              3
  • Soy sauce                                      2 tbsp
  • Leeks (diced)                                 1/2 cup                                  
  • Salt (to taste)
  • Pepper (to taste)
  • Green chillies (diced)                      3
  • Paprika (to taste)
  • Oil                                                2 tbsp
  • Parmesan cheese                           1/3 cup
  • Heavy cream                                  1/3 cup



METHOD 

  1. Heat oil in a pan, add ginger & garlic paste & sauté it for 1min.
  2. Then add in your onions, carrots, salt, and pepper and mix them well (cook it for 3 to 4mins)
  3. Now put your eggs in, stir nicely and keep on cooking (medium heat), until the eggs are ready.
  4. Next throw in the roti, soy sauce, paprika, Green chillies & leeks & give it a good stir (cook this for 3 to 4mins).
  5. Then get your tomatoes, parmesan cheese & milk in & leave it for another 4 to 5mins, until everything is evenly cooked (make sure to stir).
  6. Finally remove from the heat & sprinkle some parmesan cheese on top.
  7. Serve with grilled chicken, meat curry or with anything you prefer…

easy chocolate pudding without eggs

Serve 4
Time : 10 mins






Ingredients

3 tbsp corn flour
2 tbsp cocoa powder
1-1/2 cups milk
4-5 tbsp sugar
1/8 tsp salt
1 tbsp butter
1/2 tsp  vanilla


Method


1.Mix together corn starch, cocoa, sugar and salt and stir the mix into 1/2 cup milk and  make a coco milk and keep aside.

2.Then  boil 1 cup milk in  a thick bottomed pan  and when the milk comes to a boil, reduce heat and stir in the cocoa milk. You need to stir  continuously until thick and creamy for about 5-6 mins. It is done when the saucepan bottom can be seen when scraped with a spoon.

3.Now remove from heat and add vanila and butter.Again  stir well until  vanilla  and butter  melts and blends in.

4.You can decorate the chocolate  pudding with some choco chips or cashew  nuts as you like and refrigirate at least for 1 hour  before serving.

JAMAICAN RICE & PEAS

Guys, my 8th recipe is going to be about a Jamaican dish called ''Rice and peas or peas and rice''.  This is actually, one of those classic Jamaican dishes and to be fair it can be found through out the Caribbean. This recipe is super easy to make and quite tasty, goes well with any kind of meat curry or by itself.





INGREDIENTS

  • Red kidney beans (boiled/canned)          2 cups
  • Rice                                                   1 1/2 cups
  • Onion (Diced)                                      1
  • All spice                                              1 tea spoon
  • Garlic cloves                                        2 (chopped)
  • Green chillies                                      3 (chopped)
  • Herbs (of your preference)
  • Spring onion (chopped)                         2
  • Black pepper                                       1 table spoon
  • Coconut milk (any milk you have)            1 cup
  • Salt (to taste)
  • Butter                                                3 table spoons
  • Water                                                 2 cups


METHOD

  1. Heat a pan and add butter
  2. Add garlic, onion, spring onion and sauté them until the onions get translucent (medium heat).
  3. Add in your herbs, pepper, all spice and stir well.
  4. Put your rice and beans and mix it well
  5. Then add the chillies, salt, coconut milk, some butter and 2 cups of water and bring that up to a boil.
  6. When it starts to boil bring down your heat and cook it until it looks grainy and the water disappears.
  7. Stir every 15mins & make sure you cook it with the lid on.
  8. Once the rice & beans cooked, you’re ready to serve.

YUMMY PORK CHOPS

Guys, my 7th recipe is ''PORK CHOPS''. Now, this is what I had last night. It came out really nice actually, so I thought why not sharing my super easy recipe with you all. Check out the pictures I took last night of my beautiful pork chops and guys please do try this and let me know :P





INGREDIENTS

  • Large pork chops (with bone)             2 pieces
  • Water                                              1/4 cup
  • Soy sauce                                        5 table spoons
  • Sugar                                               2 table spoons
  • Salt (to taste)
  • Pepper                                            3 table spoons
  • Lime                                                1 teaspoon
  • Vinegar                                            1 1/2 table spoons
  • Garlic paste                                      3 table spoons
  • Ginger paste                                     3 table spoons
  • Turmeric                                          1 tea spoon
  • Herbs (of your preference)


METHOD

  1. Firstly, what you have to do is to marinate your pork chops.
  2. So, take a large bowl add in your water, soy sauce, sugar, salt, pepper, lime, vinegar, garlic paste, ginger paste, turmeric and herbs.
  3. Mix them well.
  4. Then add your pork chops in to the bowl and try to get them covered with the sauce as much as you can.
  5. Leave it for at least 3 to 4 hours covered with a foil paper or a lid (in the fridge)
  6. So, after marinating put it in to a baking tray (add in rest of the sauce as well) and bake them in the oven until they look golden brown from the outside and slightly pink from inside.
  7. Now remember, you don’t want to over cook them. So, keep on checking every 20mins or so.
  8. When it’s ready serve it with some mashed potatoes, salad or with anything you like.

POTATO MASALA

Hey guys, so my 6th recipe is going to be a dish called ‘’POTATO MASALA’’. Potato is such a versatile vegetable & the numbers of dishes you can make with potatoes are amazing. This is a very spicy dish, I must say. And I’m going to tell you how to make this within few minutes.






INGREDIENTS 

  • Large potatoes (diced & boiled)               2         
  • Oil                                                       1 table spoon
  • Cumin seeds                                         ½ tea spoon
  • Mustard seeds                                       ½ tea spoon
  • Small onion (chopped)                            1
  • Turmeric                                              ½ tea spoon
  • Red chilli powder (to taste)
  • Coriander powder                                  1 table spoon
  • Green chillies  (finely chopped)                2
  • Small tomato (diced)                               1
  • Salt (to taste)
  • Lemon juice                                          1 tea spoon

           

METHOD

  1. Heat a pan (medium heat) & add oil.
  2. When oil is moderately hot add cumin & mustard seeds.
  3. So, as you see the seeds cracking, add the onion and sauté it for 3 mins.
  4. Then add your turmeric, red chilli powder, coriander powder, green chillies, tomatoes & cook them for 3mins.
  5. Add in your potatoes and salt.
  6. Give them a good stir (if you notice the mixture bit dry add in a little bit of water)
  7. Cook it for another 3mins and you’re done.
  8. Serve it with rice, bread or with roti.

CUTTLE FISH MY WAY

Time : 20 munites
Serves  2

Ingredients :
  • 200g Cuttlefish
  • 2tsp garam masala
  • 1 tsp chillie pwder
  • fennel seeds
  • 1/2 tsp turmeric
  • 1 onion diced
  • finely chopped garlic & ginger
  • tomatoes 
  • 2 tsp oil
  • curry leaves/minchi
  • Cloves, cardamon, cinnamon (optional)
  • Soy Sauce (optional)
Method:

  1. Heat a pan , add  2 tsp  oil.Then after few seconds add  fennel seed and saute till fragrant.
  2. Then add cuttlefish cut into 1' inch pieces/rings  and saute it lightly.Its good if the cuttlefish is pre-soaked.Otherwise be careful when you are adding cuttlefish into oil.
  3. Now add 2 tsp garam masala, 1tsp chillie powder and 1 cup of water.Cover it with a lid and let it cook  for 10 minutes
  4. Then after 10 minutes cooking add turmeric and salt,stir it well, leave it until the wateriness disappear and it looks dry
  5. Now you can add  finely chopped garlic and ginger and curry leaves.Stir for 2minutes and  add  onion, green chillies, tomatoes, soy sauce , and herbs .
  6. After another 5 minutes you are done.(you can add some more water after adding herbs if you want gravy)
  7. Make sure you add some lime juice  before you serve it .














MYSTERY MAN'S CHEESY BAKED CHICKEN

My 5th recipe is gong to be about a recipe which is made by mystery man. He He. So I thought of calling this ‘’MYSTERY MAN'S CHEESY BAKED CHICKEN’’ dish. This is a dish which anyone can make. It’s very easy, tasty and nothing fancy.





INGREDIENTS

  • Chicken breast (diced)                                                2 cups
  • Garlic  (minced)                                                         4 cloves
  • Onion (chopped)                                                        2 large
  • Salt (to taste)
  • Chilli powder (to taste)
  • Pepper (to taste)
  • Lime                                                                         2 table spoons
  • Cheese (any amount you like)

  
METHOD

  1. Firstly, boil the chicken dices in salty water until they gets tender partially.
  2. Take a bowl and add in the garlic, onion, salt, pepper, chilli powder, lime and some water and make a sauce out of it.
  3. Then add in your partially cooked chicken dices in to the sauce and mix thoroughly.
  4. Marinate it for minimum 20mins.
  5. Put them on to a baking tray (add remaining sauce on to the chicken dices)
  6. And bake them until they turn golden brown.
  7. After it’s done take the tray out and sprinkle some parmesan cheese while it’s hot.
  8. Serve it with garlic bread or with a bowl of veggie fried rice or with anything you like.

 Note. You can use any type of cheese you have at home for this recipe or else skip adding cheese.

HOME MADE GARLIC BREAD

Hey guys, so my 4th recipe is going to be about ‘’GARLIC BREAD’’. Now, for this recipe you can use any type of bread you like. This is just a basic garlic bread recipe. So feel free to add additional herbs or cheese on top.  




INGREDIENTS

  • Bread                                       5 slices
  • Butter                                      4 table spoons
  • Crushed garlic/garlic paste          4 cloves/ 3 table spoons
  • Chopped parsley                        1/3 cup
  • Salt & pepper (to taste)


 METHOD

  1. Firstly, what we are going to do is prepare the blend.
  2. Take a bowl and add in the butter (leave it for 5mins under room temperature to melt it down a bit)
  3. Add the crushed garlic/garlic paste in to butter.
  4. Add freshly chopped parsley.
  5. Then season it with salt and pepper and start stirring well.
  6. When finish stirring, start spreading the butter blend on to the bread slices.
  7. Arrange them all on a baking tray.
  8. For soft garlic bread, place the prepared bread under the broiler unit for a minute or so, until it is brown on top and heated through. For crunchy garlic bread, place the prepared bread in a 350 degree (F) oven for 10 minutes. When the garlic bread is done, remove it from the oven.
  9. Serve it immediately, while it’s hot.

WHITE SAUCE WITH VEGGIES AND PASTA

Guys, so my third recipe is going to be about the famous ''White Sauce''. Now speaking of white sauce, it’s very easy to make and it’s also the base for lot of things like macaroni, Cheese for an example. 





INGREDIENTS

  • Butter                                                  4 table spoons
  • Flour                                                    3 table spoons
  • Milk                                                     4 cups
  • Salt & Pepper (to you taste)
  • Boiled pasta & Veggies


METHOD 

  1. First take a pan and heat it.
  2. Add 4 table spoons of butter and let it melt.
  3. When the butter melts (reduce your heat to medium), add 3 table spoons of flour.(remember to whisk it as you add the flour in according to avoid getting lumpy)
  4. Just keep whisking and cook it a little bit (4mins), so that you don’t get a raw flavour of the flour you added.
  5. Then add your 4 cups of milk slowly while whisking (don’t worry about the lumps, they will just disappear)
  6. Do not stop whisking until you see all lumps gone.
  7. Keep whisking constantly & boil the sauce, you will see it getting thickened (make sure it’s not too thick or watery either).
  8. At this point, you could add salt and pepper to your taste and finish up cooking.
  9. Now, take a plate, add your boiled pasta and veggies and you could just pour some of the white sauce on it or mix all of them together and serve however you like.

salmon & egg rice

Time :20 minutes 
Serves 4                                                                                                                                          

Rice is a traditional dish in Sri Lanka.This is a simple recipe you can try when you don't have time to make extra curries.


Ingredients:
3tsp butter/oil
2 onions diced
3 ribs celery finely diced
3 cups cooked rice
3-4 curry powder 
1/2 tsp pepper
salt to taste
200g can salmon
4 hard boil eggs




Method:
Heat oil or  butter in a large frying pan. Add onion and celery. Cover and cook over a medium heat, stirring occasionally until soft but not browned.Now add rice,salt, curry powder and salmon. Then add pepper, stir well and remove from the heat.

Decorate with with eggs before serving.

Note: If you don't have salmon at home you can use some tuna or chicken.But make sure either you boil them separately or add to the mixture before add rice and fry till golden brown. 

EASY CHICKEN BIRIYANI

Firstly, I want to thank all my viewers, my friends and of course my loved ones for the positive feed back :D
Now, my second recipe is going to be about an easy peasy CHICKEN BRIYANI rice. I know that whenever us girls here about these types of recipes we get scared. But I'm a biriyani fan myself. I love having biriyani for lunch. Biriyani’s are very versatile and delicious dishes. Today I'm going to teach you how to make an easy chicken biriyani. So let's get started....





INGREDIENTS 
  • Rice (any kind)                                          2 cups
  • Chicken                                                   300 g
  • Half boiled veggies (of your preference)                  
  • Tomatoes                                                 1 large
  • Green chillies                                           3
  • Cumin seeds                                             1 teaspoon
  • Salt (to your taste)
  • Cardamom (black/green)                            2
  • Ginger / garlic paste                                 1 tea spoon each
  • Onions                                                    1 large
  • Coriander (fresh/ powder)                         2 table spoons
  • Paprika (to your taste)
  • Yoghurt/ curd                                          200ml
  • Herbs (any kind you have)                          2 table spoons
  • Butter                                                     1 ½ table spoons
  • Saffron                                                    tea spoon

METHOD

  1. Put your chicken in to a bowl add some salt, 100ml of yoghurt, half a tea spoon of saffron, paprika and 1 table spoon of coriander powder and let it marinate for 15mins or so.
  2. Meanwhile you can cook your rice as usual by adding the cardamom, salt and the other half a tea spoon of saffron.
  3. Heat a pan, add butter and let it heat for 2mins, add cumin and let it splatter.
  4. So when you hear the splattering sound, add ginger & garlic paste and sauté it for 3mins.
  5. Add your onion & cook them until they turn golden brown (make sure you don’t burn them).
  6. At this point you could add your veggies & tomatoes & cook them along with the onions for another 6mins.
  7. After 6mins add your marinated chicken mixture to your onion and veggie mixture, stir them well.
  8. Add the herbs, paprika, saffron, salt, green chillies & coriander powder (cook them in a medium heat)
  9. Keep checking your rice time to time.
  10. Make sure that chicken curry has enough gravy; add rest of the 100ml of yoghurt
  11. Let it simmer for 20mins to cook the chicken mixture.
  12. So, after your chicken curry’s done, take another pan/bowl and start layering.
  13. Firstly, add a nice bed of rice to the bottom of the pan and then add all half of your chicken curry, again add all half of the remaining rice and then of course the remaining chicken mixture and last of the rice.
  14. Keep this mixture aside covered with a lid for 5mins.
  15. And finally mix them all gently and nicely before serving.

2 cups cubed cantaloupes 
1 cup ice cubes
1 cup water
1 tsp sugar
salt to taste 


Instructions:
Blend all the ingredients.

Do you wanna know about Cantaloupes ? 

EASY MAYO PASTA SALAD

So, guys my first recipe is going be about a quick and easy pasta salad. To prepare this you will need only few ingredients. It’s going to be delicious, very easy to make and you could store this as well. I can guarantee it will disappear from the table the moment you put it.







INGREDIENTS

  • Boiled pasta (whatever kind you like)            3 cups
  • Mayonnaise                                               4 table spoons
  • Boiled veggies (of your preference)
  • Tuna                                                         1 can
  • Salt & pepper (to taste)
  • Lime                                                         1 ½ tea spoon
  • Mustard paste                                           1 tea spoon


METHOD

  1. Boil both pasta and veggies separately. Drain them and keep them a side.
  2. Then combine all your boiled pasta and the veggies in to another bowl.
  3. Drain the water/oil from the tuna can and smash it in to the pasta and veggie bowl.
  4. Then you can add all the Mayo, salt, pepper, lime and mustard paste.
  5. Make sure that you mix/toss the salad well and keep it in the fridge for like 15mins or so.

 NOTE. Instead of using tuna you could add boiled eggs, fried eggs or any leftover meat you have at home. But make sure you cut them in to bite size pieces. 

Enjoy the salad as a brunch or with your meals.

MY DREAM OF COOKING IS THE WISH WHICH MY HEART MAKES



Hi, my name is Annie Ferdo. And I’m nervous :) since this is my first blog ever. Please excuse me if I'm posting anything wrong.
Well, this is just an introduction of my blog which I'm going to start from tomorrow onwards. So before anything, I want to thank my dearest friend Nadee Kaduruwana for encouraging me to start this blog. So thanks Nadee :) xoxo
Actually, to be honest I hated cooking until I came across with a movie called JULIE & JULIA. After the movie, i started loving the legendary JULIA CHILD who was a chef, author and a famous television personality back then.
I found so many interesting things about the story behind this movie and I was surprised. I’d say this movie literally got me in to cooking. I was so inspired by this movie and I actually have started trying out new recipes ever since. And now whenever I try a new dish I take few pictures as memories of those wonderful times I spent while my cooking adventure.
